Sunny Egg and Spinach Leaves

Fried eggs with cherry tomatoes on a bed of spinach makes for a really healthy breakfast.

Ingredients
  

  • 4 Eggs
  • 10 cherry tomatoes
  • 2 handfuls of spinach
  • 1 tsp coconut oil
  • Salt and pepper to taste

Instructions
 

  • Put coconut oil in large frying pan to hig heat.
  • Arrange spinach as you like on your plate.
  • Crack eggs into frying pan and add tomatoes.
  • serve when eggs are done to your liking and add salt and pepper to taste.
